Holidays are the time of year where we listen to Mariah Carrey, we max our credit cards on gifts, and of course over indulge on our moms home-made goods!
Now, no shade to moms - but those tastey treats can really have their toll on our bodies. ..so I decided to spare your days of regret following the holidays and fill them with days of semi-regret. How? With vegan baked goods.
So if you're looking to over indulge without the regret, here are my favorite vegan recipes that will make your holidays and your stomach a little more merry!
Vegan Gingerbread
Gingerbread
1/2 cup of coconut flour
1/3 cup of plain flour
1 tablespoon of ground ginger
1/4 teaspoon of ground nutmeg
1 teaspoon of cinnamon
1/4 cup of maple syrup
1/2 teaspoon of baking soda
1/2 cup of coconut oil
1/2 cup of almond milk (you can use what ever dairy-free milk you prefer)
Icing -1 cup of icing sugar -1/4 teaspoon of vanilla -1 tablespoon of dairy-free milk -Pinch of cinnamon
Method
Before you begin, set your oven at 180 degrees Celsius.
Combine all gingerbread ingredients into a medium sized bowl EXCEPT the almond milk. Mix the ingredients in the bowl together, when its begins to form a thick texture add almond milk (or your choice of non-dairy milk)
Once you add the almond milk it's time to press the dough. This requires using your hands, so please wash your hands before this step. With your hands, start pressing the dough to form into a firm ball.
Once pressed, take out a sheet or cutting board - anything where you can place the dough on and roll it.
Spread your choice of flour onto the sheet or cutting board.
Place the dough on top of the sheet, and with a rolling pin, roll the dough out until it's a few millimeters thick - or again how thick you want your cookie to be.
After the dough has been rolled out it's time to cut out your cookies. I love using a lot of fun shapes - Santa's, Reindeer, Stars, you name it - Get fun and creative!
Once cut, place your cookies on a baking tray and when the oven signals that it's warm enough, place the cookies in the oven. Leave the cookies in for about 12-15 minutes (or until the edges of the cookie have browned) and voila! Vegan gingerbread men.
Eggnog Bites
1 3/4 cups oat flour
1/4 cup coconut flour
2 Tablespoons cane sugar (or the sweetener of your choice)
Pinch of sea salt
Pinch of cloves
Pinch of nutmeg
1/4 cup peanut butter (or the nut butter of your choice)
1/4 cup maple syrup (or the liquid sweetener of your choice)
1/4 cup coconut eggnog (or the eggnog of your choice)
Icing sugar to coat
Method:
Put all the ingredients into a medium bowl, mix, and then form into balls with your hands.
That's it! A simple and healthy snack.
