HEALTHY HOLIDAY BAKING!!


EEEEeeee! I'm so excited about this post! I freaken love baking, and I love the holidays, I couldn't have been more ecstatic about creating this post, SO I hope you enjoy!!!!

The holidays are only a few weeks away and I know a lot of you might be worried that with all the sweets and food that you're going to over indulge. And you should be worried, because you probably will over indulge!

However, I decided to spare your days of regret following the holidays and fill them with days of semi-regret. How? You may ask, well, to make you feel a little less bad about over indulging I have come in clutch with some HEALTHY HOLIDAY recipes. So without further or due, here are two VEGAN recipes that will make your holidays and your stomach a little more merry!

VEGAN GINGERBREAD


Cookie ingredients

-1/2 cup of coconut flour

-1/3 cup of plain flour

-1 tablespoon of ground ginger

-1/4 teaspoon of ground nutmeg

-1 teaspoon of cinnamon

-1/4 cup of maple syrup

-1/2 teaspoon of baking soda

-1/2 cup of coconut oil -1/2 cup of dairy-free milk, I used almond

Icing ingredients -1 cup of icing sugar -1/4 teaspoon of vanilla -1 tablespoon of dairy-free milk -Pinch of cinnamon


Here is how to make them:

Before anything, set your oven at 180 degrees Celsius.

Put all the ingredients into a medium sized bowl EXCEPT the non-dairy milk, there is no specific order of adding these things, just dump it all into a bowl and mix. Again, EXCEPT the non-dairy milk. mix the ingredients and when its starts to form a thick texture add the non-dairy milk.


Once you have added the non-dairy milk, it's time to get down and dirty (lol). With your hands, yes your hands, start pressing the dough to form into a ball.

Taking out a cutting board or what ever you use when your rolling cookie dough (people you live with will hate you if you use your kitchen table for this, please use a cutting board), spread flour. Just put it all over the cutting board, and then place that big ball of dough on it.


With a rolling pin, roll the dough out until it's about 1 cm thick. K I actually don't know how thick it should be, 1 cm sounds pretty thick. But I mean you should know how thick a cookie should be, here I'll make it easier for you, just do it according to how thick you want your cookie.

After the dough has been rolled out CUT YOUR COOOOOKIES!!


You can use whatever shapes you want, I used gingerbread men because they are so darn cute.


Leave the cookies in the over for about 12-15 minutes (or until the edges of the cookie have browned) and voilaaa! Vegan gingerbread men. They taste great and they're a super light treat!

EGGNOG BITES


Ingredients

1 3/4 cups oat flour

1/4 cup coconut flour

2 Tablespoons cane sugar (you can use any desired sweetener)

Pinch of sea salt

Pinch of cloves

Pinch of nutmeg

1/4 cup peanut butter (can sub with any other nut butter)

1/4 cup maple syrup (or any other liquid sweetener)

1/4 cup coconut eggnog (or which ever eggnog of choice!)

Icing sugar to coat


These Eggnog Bites are probably the easiest thing to make. Literally just put all the ingredients into a medium bowl, mix, and then form into balls with your hands.

Yeah the recipe instructions were literally just that sentence. Honestly took me about 10 minutes to make, and I was on Instagram half the time.
